They have increased energy storage capacity, low cost, stability, and are safer. Unfortunately, 0 degrees C (32 degrees F) is too cold for many pharmaceuticals and biologic products. They can also expand in size (expand by 9% volume as it solidifies into ice), which leads to insulating packaging design concerns.
